They allow you to sculpt the outlines of a pattern. It is the first tool, after the Swivel opening knife, which gives relief to the pattern. Bevelers stamps come in several widths and can be smooth or textured.
This Beveler handle stamp is smooth and medium, which allows for versatile use.
